Insalata Caprese

Tomatoes and basil from the garden with big fat slabs of fresh mozzarella.
An easy and refreshing salad perfect for the last evenings of summer.
We had it as a side to Pesto-stuffed Chicken with new potatoes from the neighbors’ farm.
Pesto Dressing
The dressing is not precise measurements. Take risks when you make it and use your best judgment to make it perfect for you.
- 1 c. fresh basil….
- 1/4 c olive oil
- 1/4 fresh Parmesan cheese
- 2 cloves garlic
- toasted pine nuts
- salt
Put all ingredients in food processor or blender, pulse until you get your desired consistency.

oh my gosh, this is my favorite salad but don’t think mine is ever so picture perfect. that looks heavenly.
Oh how I love caprese. I could eat it everyday for every meal and be completely satisfied.
